Mine aren't a Harley design, but do stick up and aren't quick disconnect. However, that design allows you to change to different sissy bars, which is what I do. They also allow for other accessories like off-the-shelf passenger pads and racks to be mounted, which I do and switch back and forth on a nearly weekly basis.

The ebay one above isn't quick disconnect either and doesn't look to have any versatility built in. The fact that the sideplates are low has little significance, since the sissy bar is welded to them, so running without the sissy bar attached can't be done. As a sissy bar, for the sake of having a sissy bar, it is a cleaner look, but I use my sissy bar for it's functional uses, not as decoration.

I think the best styles are the quick disconnect ones. Then you can go back and forth as you please and easily have nothing in the rear at all. However, I already had Easy Brackets for non-QD accessories. Would have been way better if I had ordered their bracket mounting hardware made for QD and accessorized from there.
