Hey Chris. Welcome to the forum. I got rims of a low rider on my bike. Look at my pics and see if they are the same ones you are talking about. I think mine came off a 06. I had to have spacers put on to make mine fit.

Ok. My bad. Now I remember. The main difference on mine was the width of the wheel bearings on the two different rims. I had to have spacers added to make up the difference.

Your street bob has 1" axles. Prior to 2006 they were smaller. Not sure if you can change the bearing to fit but they aren't a direct bolt on.

2008 and newer have 25mm bearings. You have 25mm axles. The 25mm bearings are not as thick as the previous 1 inch bearings. They utilize an additional spacer inside the hub to make up the difference. 25mm bearing will fit into the wheels you want. If you find someone competant, they could remove your bearings and install them in your new wheels.
Helpful Hint: purchase new bolts for your rear wheel pulley as the manual states. Use the proper Loc-tite and a good torque wrench. Many folks have found their bolts have loosened up and destroyed the wheel.
