One of the things I do when considering a bar change is to go to Lowes and buy some PVC pipe, and fittings, then play with mock ups. Find the position that feels natural and comfortable for you, then try to find bars that meet that need. In my case I wanted a completely different look, so I made my own, but have been through too many bars on different bikes over the years to feel good about admitting...
Once you have a PVC mock up you can check cable length and figure out what you need to do about wiring.
I agree with others, if you go with apes, use short risers.
You also have the advantage with apes of being able to roll them forward or back to add to your comfort level. They certainly give you the best advantage for finding the sweet spot for comfort.
I also was thinking of going with taller bars. My lower back hurts on long rides i think because of the reach and low bars. I was thinking of going wit 2" risers and road 6 customs 12" bars. I have seen them on another members bike here and they look good. Would like to find someone local and feel them out though. Since its no small job to change out the bars.
Just to throw this out there, I have the HD Street Slammer bars on my 06 Wide Glide. The previous owner put them on, so I don't exactly have anything else to compare them to, but I really like how they look and fit. They might be the step in between going from beach bars to mini-apes.

Not sure on the 01, but pullbacks don't really work on the 05, the bars may contact the console, I looked at pullback risers once for mine and they would not work. The frame change on 06 and newer extended the neck a bit to make pullbacks possible.
