Back in 06 when I installed V&H SS's on my 05XL1200C I didn't like the gaskets in their kit & used standard HD crush. Swapped back to stock exhaust when bike sold & the crush gaskets formed/worked as designed...none of the material pushed out into exhaust/cyl port. If you torque to spec - they'll work fine...JMO.
Im actually in the process of swapping out my V&H shortshots for some Cobra Draggsters. When I put the shortshots on, the Harley Shop parts counter chic recomended the SE gaskets. I imagine the shop you were at probally wanted to hose you into spending more then the $11.00 for the gaskets by getting you to have them do the install. Im replacing the shortshots due to new PA laws and loss of top end performance. Anyways I would suggest the SEs for any exhuast replacement, they have a noticible difference in material and quality vs the stock ones the cost $9.00.
new pa laws? i used the screaming eagle gaskets when i did my exhast. the stock hd ones were bigger and i wasent able to get the nut for the flanges on far enough and the nuts were losening up on me. once i replaced them with the screaming eagle ones it allowed then nuts to be put on further and have not backed off.
