I'd go 97 or 98ci with some hot cams and headwork.
I just upgraded my 88ci to 97ci Axtell pistons, S&S 640g cams, CNC cut/ported heads, Mikuni carb (you will need a EFI tuner), Billet oil pump, waiting on Dyno results and I can go pick it up.
If you have more money to spare, you can go with a Screamin' Eagle 120r crate motor that will bolt into your bike
