Like others said dont be afraid to do this. I never worked on a bike and this was one of the 1st installs i did. Big thing is just take your time, no need to rush this. Also good diagram of the connectors helps if you have to de-pin the connectors to pull the wires out of the bars. As for what height you need and will be comfortable will be up to you. Best thing is to grab a buddy for some help. Then you sit on the bike, with your eyes closed put your hands out to what you think would be comfortable. Then just have you buddy measure up from the trees to see how tall you want and the width of your hands. I'm 6' and 12-14" bars would work well.
By the look of your avatar it looks like you have a 2010-12 WG. So to go with 12-14" bars you wont need wire extentions. You will need new throttle, brake, and clutch cables. I am running stock clutch and brake cables from a street bob. My throttle and idle cables are +6 Magnum Shielding black diamond cables. If you have a 2012 wg i heard you dont have to de-pin the connectors because they are small enough to pull through the bars.
You are correct my bike is a 2011. I'm 6' also and was thinking 12 -14" bars would work. I'm not scared, I'd call it nervous!! I would like to do the work myself for the satisfaction of doing it myself as well as the money I'd save. I plan on checking out all info everyone has given me before I pull the trigger. Thank you to all!!!

Hey pontiac, do you mind posting up some close up pics of the black diamond magnum cables. I'm looking into these for my new bars. Thanks
