It doesn't take much to set up any bike to do the Switchback thing. Bought my Fat Bob used and it had a windshiled and saddlebags (also added Touring Air Shocks, Mustang Seat & removable Rack/sissy bar):

Added barebacks so the bags come off easy:


You've got to love your bike, so get the one that looks and rides best to you. A few simple mods usually gets you where you want to be.

Air shocks are manually adjustable... but only slightly.

2) Do you like like comfort and great handling? The Switchback is a HUGE step up from the Street Bob. If you like the classic look than the Switchback is really a great option.

Not to say that it's even comparable to the touring bikes because it aint, my Evo Road King was a much nicer ride but when you compare Dynas to Dynas, the Switchback beats em all hands down.

Also there are NO air shocks on the Switchback, just wanted to restate that.
This will "probably" be my last bike purchase so I appreciate your post having owned and ridden both bikes. I will definately post some feed back when I test ride them. The HUGE step up comment has me leaning towards the switch back. If it's better handling and more comfort ..what's not to love.

Remember you don't have to buy all Harley parts to put on your Street Bob. You can pick up a Memphis Shades windshield for cheaper than Harley's and there are lots of different bags.

For how you're wanting to set it up and do with it, I think you would be better off going with the Switchback in the first place. If you decide you want to remove the bags & windshield you can. The Switchback has a little more trail in the steering & has the FL forks, which makes it a little smoother on the highway.
The switchback is a nice bike & if I had the time to take more extended trips I would look at the Switchback and the Road King. Advantage of the Switchback or any Dyna chassis over a touring chassis is the weight.

The other big consideration for me is is that I'm 5ft 5 and like mid controls and won't know for sure until I test drive if the floor boards on the switchback are good for me.
Again I know until I actually have something to compare MYSELF I won't know.
But I am appreciating all the advice and opinions
