What about the steering head bearings? That would be the first thing I would check and then tire pressure and tire balance which you siad you already checked.
I have the same and have doen the folllowing, front fork brace, after market rear shocks, apes, kevlar bushings, new rims and bearings, (wider front tire)
So I cant comment but I know the stock ride was ok up to 100mph without issues.
Now I am not going to tell you how to ride, but what sort of pressure and grip do you have on the bars?
I know that if I have a death grip on its easy to get into a wobble but lossen up on the grip and its fine (think in terms of the car sterring wheel), you only need gentle pressure to guide you ride where you want it to go the gyro affect etc will steer your bike after the gentle imput.
Also I would take a good look arounfd the rear end and the engine, also what was the weather liek when it happened?

bought a new gauge, checked the tyres, and set it to what i thought was correct. then i went to the local garage, and used theirs. 10psi out. put 32/40 in using the garages gauge, and problem solved.
now waiting for a new pressure gauge to be sent to me.
i guess the lesson is never assume a new part works correctly!
my fat bob has rock solid handling until i loose about 4 lbs out of either or both tires , then its a little skittish , not a death wobble by any standards , but i notice the difference , so even as little as 10% down will make a fair bit of difference
had similar issues after changing to the ND's -- seems to me that any change to the front end affects the fall away (tires,windshield) -- tightened my steering head just slightly and no more loosey goosey wobbles-- i prefer my steering slightly on the tight side

Faulty pressure gauges can be a killer. I use an Accu-Gage. A little 'pricey', but I'm worth it.
