Sounds like a good thorough carb job is in order, but a new air cleaner I bet would make a difference. I like stating the obvious....
since you need the ac upgrade I would go ahead and do that first....sounds like you are set up to move a lot of air but with stock ac it may be choking
I feel kinda retarded that I forgot to mention the acceleration. Off the line she's pretty decent, but if I try to roll on full throttle the bike just about stalls (which is why i was thinking the main jet might just need to sit in some carb cleaner overnight). Right around 60 the throttle response get's real sluggish, and i've got to roll on and off throttle to get some more mph out of her.
I can remember that same problem a long time ago, but not what it was on, or what was done with it, but it does sound like a carb issue. 8541hog's air cleaner suggestion is a good idea too; I recently fixed a riding mower that wouldn't power up by cleaning out the clog of cottonwood tree seeds (white fluff, if you're not familiar with it, like stuffing the filter with cotton) in the ac. Since that old bike had a lot of work done on it, check the jet sizes against stock - with the aftermarket mufflers, the idle jet could be a size up and that's probably good, but if someone thought they needed more gas for all that "power upgrade", might have overdone it on the main jet; for what you have, I'd think the stock jet size might be best. The needle position might have been played with too; that could be a little more difficult to figure out, but there's plenty of carb tuning/setup advice right here in the forum, just do a search on carb tuning.
