What is the easiest, quickest, and best way to turn my city bike into a touring bike for the day? ...Without turning any more screws than you have to? Plus hanging bag hardware is not appealing to me. What do you recommend for a 2007 Street Bob?
The HD stuff is good. It hangs out there a little when not in use but, there are caps you can get to slide over them when not in use to tidy thing up a bit that clean up the look pritty good.
I have it and, can change out from one-up to 2-up W/sissy bar and luggage rack in about 2 min.
It's great when traveling, you can take the stuff off and, leave it at camp, room, ect. to clean up the look when puttin' the local area. And it's still there when you need it.
+1 on the hd quick detach with luggage rack. I also have the saddlemen r1300 roll bag which, having been through plenty, is my favorite. You can get it for around $60 which is another plus.
I was looking at this fender mounted backrest. Kuryakyn makes a similar item that will work with different back rests, but theirs is chrome only. Neither of these requires and mods. The HaulenAss product looks better but the Kury gives options for the sissy bar,
I'm very happy with my HD QR sissy and luggage rack. I also got the HardStreet Slimbags with Edge Brackets after a LOT of deliberation. I LOVE the size, shape, lock-ability, and durability (so far) of these bags. The price was pretty reasonable on Amazon. With the QR sissy bar brackets and the Edge brackets they stick out a fair bit, but the ability to strip it down in 2 minutes make it worth the hit in appearance. If I'm traveling around town sometimes I'll just run the sissy with a small Saddleman bag on the Luggage rest for gloves, drink, tools, whatever.
+2 on HD quick detach gear. I really wanted a luggage rack + sissy, but went for the one-piece detachable sissy bar because it's almost as useful but looks way cooler (if you squint you can see it in my avatar pic).
But that's the beauty of it... if I'm feeling spendy I could get the regular sissy bar + luggage rack too and swap em out easily. Nice.

I got the HD luggage rack/sissy bar added to my Switchback. Its a nice set up it can go from dresser to cruiser in about 2 mins. Only thing that worries me is that it can also get stripped in a parking lot just as quick (minus the bags). Wish there was some type of lock on those items...
