Default Carrying essentials?
I have a '12 FatBob and put on a swing arm bag. It's not big but it holds the essentials without taking away from the look of Bob. Only downside is you have to remove the passenger left peg so she has to rest her foot on the bag... Any other suggestions without turning this beauty into a bagger?

Fork bag, I wouldn't ride 2 up without both rear pegs

It wouldn't be legal in the UK to take a pillion without both pegs. I'll be putting my tool kit behind the front wheel under the regulator.

Look into Bad&G bags, great value for what you get. A quality bag made here in the US by one man. I personally really like mine, he has a bunch of sizes and shapes. I have the hard leather DR01L and it hold enough, as far as essentials.
