Canada is a big place, so depends on how far you want to travel. Give us a clue as to where you are and someone should be able to help. Regardless, word of mouth is the best way to find out who does the best work in your area.
I’m from Ontario, just outside of Toronto. Pretty tough to find real true high performance shops nowadays. In Alberta I’ve heard a lot of good reviews about Hole Shot Engine works, watched some of his videos and seems like the guy really knows his stuff. JPrecision is a machine shop in Quebec that does impeccable work, especially his head work & porting. Rockys Harley in London,Ontario is supposed to do good work as well.
Back in the day Donny Petersen was a very well respected name in the business. I had some work done in his shop back in the late 90’s on my evo Fat Boy and that bike never missed a beat. Do some research and ask other riders. Even though Canada is a big place, we aren’t as fortunate as our U.S neighbours who have many shops at their disposal.
Good luck...
