I backed the clutch cable off about 2 turns today. Seems to be doing okay, if it is still slipping it is very little. Like I'm in 5th gear around 1600 rpm and get on the throttle. It seems like the rpm goes up maybe 200 rpm before the speed starts climbing maybe. It might just be in my head. I'm going to ride it like it is for now.

Probably not "in your head". That is lugging the motor; bad juju. Most consider anything under 2500rpms as lugging; don't do it.
@djl might be a tad high of 2500 RPM for 5th gear but 22 to 23 is definitely the minimum depending on throttle position.. I would never load up a motor in 5th gear at 1600 RPM.. Don't lug the motor.. Not healthy and in all honesty I doubt you're slipping, especially now two full turns off the clutch cable? Is a hell of a lot.. Maybe you should get the manual out and adjust the clutch properly starting down at the pressure plate..

Yep, got the FSM. I adjusted the clutch rod wrong the first time. Second time was till it just seated against the plate the backed off 3/4 turn. Then went to adjusted the clutch cable. Adjusted it so that when I pulled the slack out at the clutch handle there was between a 1/16 & 1/8 play. I did have to pull on it to get that free play. So I thought I would try to adjusted the cable again yesterday so as the free play was there without really having to pull on the cable to achieve that. That was after working the clutch leaver 3 or 4 times after every adjustment to make sure everything seated properly. So now after the 2 turns on the cable adjustment the clutch seems better. When running between 45 and 50 MPH in 5th gear I am typically sitting between 2000 and 2300 RPM. Dropping to 4th gear puts me above 2500 if I remember correctly. The between 2000 and 2500 feels right and sounds right. Not lugging or revving, the bike pulls hard when I roll on the throttle in that RPM range. Yes being down in the RPM range I was in was lugging. I did that to see if it was slipping under extreme load. That might not have been the right thing to do.
Bottom line is, I screwd up the adjustment twice. I own that and being a novice.

You are not the first to be guilty of lugging; some never learn or learn the hard way. These vtwin motors are happiest when they are spinning.
