I am replacing my EVO with a brand new EVO factory motor (zero miles) . Should I use break in oil? When I break in car engines I use a Joe Gibbs break in oil that is high in zinc.

Any hi zinc conventional will be fine.. I would go to the S&S site and see what their recommendations are for breaking in a new Evo motor..
Myself nothing over 3,500 RPM for the first 150 miles..
Load and unload the engine never constant steady light too in cruise for long periods, like 24 or 2500 RPM.. You want the rings to seat properly..
Keep it under 4,000 RPM till you hit about the 500 mi mark, do an oil change and you're good to go..
