Default 97 ultra jug gasket

any one know if you can change rear jug gasket on bike

Do you mean the gasket on the 3 piece head. rocker cover upper/lower/inner + cylinder head right/left + umbrella ?
If that is the situation the answer is yes to "on" the bike.
The key is to unlink/unbolt the metal upper motor mount under the gas tank and then remove the front lower rubber frame engine mount and assembly(stuff below oil filter). This allows you to lower the front of the motor and tilts front of motor forward gaining some space. The lifting of tank an inch or two and removal of seat makes it possible to access the rocker cover bolts. If you have allen/hec on rockers you will need a special flat tool with an allen/hex piece on the end($20-$30) OR need to cut a tiny piece of allen/hex and drop into bolt and then turn little piece with a tiny wrench(tiny sears carb. wrench). I have done this job more than once...it is not hard but requires time, patience and methodical work. A couple of allen/hex pieces, a bike jack to level bike is useful and a car jack to lift/lower motor along with a piece of wood to protect motor is mandatory.
