I've run a g carb on other 80" Evos and never had any problems

a "G"?
Why??

Going to have to be a Pretty good Tuner to get it to transition smoothly...likely a Thunderjet will help.

Changing the seals isnt a bad job but I try and avoid dealing with those p.i.t.a. Allen bolts that hold the intake on if I can!

^^ Good, but, not with Carb Cleaner...It is good Paint remover, and is too volatile to be spraying in that area...Brake parts cleaner, WD-40, even water...anything will cause a Change if Sucked thru a leak!!!

What RacePres said above is good information.

The first thing to do is once the Allen head bolts come off is to replace with hex head bolts. Quarter inch twenty, 1/4-20, IIRC.
