If you should go down the path of requiring high lift springs,I have a complete set for sale with almost no miles on them. Just throwing that out there.
I had the v thunder 3010 an it made my 99 fatboy a completely different bike...I think it's very similar to the ev 27...good down low but still has some top end to it. first time I rode with the cam I bounced it off the rev limiter a few times...with the stock cam I never hit it since it was falling off well before that.

EV13 is slightly biased for low to mid rpm with still plenty on top.
EV27 gets you a bit more on top at the expense of a bit less down low.
I have the EV-13 and a few things and canât imagine my 80â relatively stock engine being built in any other manner for my riding style, needs, and usage. I am never looking for more anywhere.
