So I went and looked at the parts fiche for both a 98 EVO & a 2003 Twin cam. The dipsticks are not interchangeable. The twin cam vents through the dipstick housing and the evo's vent is located at the top front of the transmission housing. So the filler spouts and dipsticks are different. That means that I would have to find a mechanical oil temp dipstick that was specifically built for the evo generation bikes. Nothing from the twin cam generations would work as they likely wouldn't fit. I'm sure somebody will tell me otherwise.
So my other options are I would need a oil temp sending unit that would work in conjunction with the oil drain bolt, I've seem some of them in my travels, not sure I really want to mess around with that or I could find a T with a sensor fitting that you could put in one of the oil lines.That also doesn't appeal to me as may cause oil flow issues.
