Cam and carb go together. Change the cam and you'll have to fiddle with the carb, so if you want a "next", do a carb and then the cam so you can re-jet the carb as needed. No point in rejetting a carb you are planning on getting rid of eventually anyway.
Keeping in mind, of course, that the more HP you get out of a motor, the less reliable it will be. You can get 70 HP out of it for 100K miles or 700 HP for 1/4 mile.
I had to have my topend rebuilt about a month ago, bored out, new pistons, etc. I added theEV27 cam,thunderheader exhaust and the S&S Super E carb. Runs much stronger and loves 75 to 80mph. According to the mechanic that did the work the Ev27 & S&S carb works the best with the thunderheader pipe and it adds quite a bit more without going too far.
