I just installed these on my 2009 EGC (fully stock). I love the sound, but I notice more when decel than anything. Idles fine, not much louder than the stock mufflers, not too obnoxious when accel, but I'm riding the bike, so if it IS loud, the sound would be behind me.
I read lots of threads to determine if a Stage I download is necessary. Mostly the answer is "no, unless Stage I air kit is also added."
No cat converter in my pipes, didn't notice any popping when decel, runs and seems to perform just fine. I'm going to ride for a while as is to see if/when performance is affected.
How will I know if or when a re-mapping or further mods might be required?

With those mufflers and no other changes you will not require* a tuner. That being said, you should get your bike tuned regardless of performance upgrades. Our bikes run really lean stock, and even leaner when we start messing with them. Lean is hot, and heat wears and breaks parts.....Getting the bike tuned properly should not be looked at as 'suggested', but rather 'imperative'...Do your bike a favor and cool it off with a proper A/F ratio!
The dealership recommended the Stage I air filter AND the download, just because I installed the mufflers. I tend to disagree with the air filter part, because that would definitely require the A/F ratio adjusted.
If I take it in for adjustment, they'll want to do both the air kit and the download. Some motorcycle mechanics say the exhaust doesn't affect the air intake, others say it does. Don't know who to believe. Guess I have to trust the dealership and just go with the whole Stage I and not just the exhaust.

It is my experience, just as another member said, bikes run lean. Lean is hot. When you open the exhaust up, you are going to run a little leaner, you may be able to get away without the tune and be just fine, but me personally, I want my bike tuned from the get go. You never know if a setting may have slipped by a tech when the bike was built. It couldn't hurt to tune your bike to richen it up a little. But this is just my opinion.

Don't do the download, it is a waste of time and money as the download is not the equivalent of an actual tune. And, while an exhaust does not affect the intake air, it is more efficient in getting the air out of your big air pump and will make the bike leaner...
