how do you set them and are they worth using

The best way to set them would be to follow the instructions that come with whatever brand you're using, and they are worth it if you don't want to have to take off everything above them every time you need to remove the non-adj ones.

You do need to know the thread pitch of the pushrods to set them properly. HDs are 24 per inch, Rivera are 40 per inch , etc, so it takes a different number of turns from zero lash to set the pushrons somewhere in the .100 to .150 preload. Depending on who you talk to, different builders recommend different preloads . I start with .100 and then look for a "happy spot" from there that allows for the quietest running.

If doing something like a cam change or cam service then they can save you a little time. If you are just running a stock bike and wondering if you should get adjustables, then no it's not worth it. If you do end up getting some and happen upon the SE adjustables then make sure to get the newer SE's that are tapered and don't cause rubbing. I plan on switching mine out to the newer style as I can hear the rubbing at times and it drives me nuts.

General rule is 50% compression and anywhere close to that will work fine.

I recently installed gear driven cams and used the Andrews Alluminum Adjustables. They were noisy, and rubbing the pushrod tubes. I just pulled them out and installed Crane ChromeMoly Adjustables....quieter and stronger. They are thinner, 3/8" but very rigid. 3 turns to adjust.

They are worth it if you don't want to remove the top end. Getting adjustable pushrods set right is a bitch!. No matter what people say about # of turns, or whatever, you'll need to adjust them several times before you get them right. Whichever jug your adjusting, just make sure you adjust the one that is bottomed out, and if the motor is hot, you'll need to wait 5 min after doing the adjustment, so, the lifter can bleed out. You should be able to rotate the pushrod with little resistance, when adjusted correctly.
