Default Need Exhaust Explained

I’ve owned my ‘09 Nightster (first motorcycle) for just over a year now. I’m beginning to think about performance modifications. At this point pipes/exhaust has my interest. I understand that to keep things in balance, this upgrade may also involve air/fuel mixture etc., so here comes the questions.

I haven’t got a mentor, or friend who owns a bike, so I don‘t have anyone to ask. I’ve been a muscle car guy my whole life. I’m looking for someone to basically explain EVERYTHING to me. The basics of doing an upgrade like pipes and exhaust.

For instance… I’ve been looking at pipes online. I don’t even know what’s included. Are these from head pipe to muffler? Or, do you just replace the muffler, and then put a matching cover on the head pipe? Do the aftermarket pipes like V&H and Rush come with provisions for an O2 sensor?
Another questions I have is this… My stock pipes have a black pipe that runs along the back side of the mufflers… What is this? Is this what people are calling baffles? Or, is it like a catalytic converter or pollution control? Do the aftermarket pipes have this thing too? Is it eliminated after installing aftermarket pipes?

After I decide on some pipes and get them installed, will the bike run horribly if I don’t change the air filer element and fuel mixture?
I’m fully capable of doing moderate mechanical upgrades on the bike, I just don’t know enough about a motorcycle engine to know where to begin. I need details of what the big picture looks like.

Thanks everyone!

Ok, I'll attempt to answer some of your questions, and lead you in the right direction. My disclaimer is that I'm not a professional mechanic, nor do I play one on tv. I'm an enthusiast who loves motorcycles. When you buy a set of pipes, it should come with headpipes, mufflers, and heat shields. It doesn't always happen that way. That black pipe running down the backside of you rear pipe is a hanger bracket to support the pipe. The baffle is inside the pipe. Save your $$$ until you can afford to buy pipes, change the aircleaner, and add a fuel management system, such as the SEST (Screamin Eagle Super Tuner), or TTS Mastertune. Hope some of this helps get you started!

Get Donny Petersen's Voluum Two about Preformancing the Twin Cam engine.
Something of a tedious read but has good info all through it.

This is a crossover pipe, it balances the exhaust pulses.
