OK what is the best way to tell the War Dept. ( Wife ) how to ride on the back of my bike ? Her first time on a bike. Yes with back rest .
That's a tough one some women never get the hang of being a passenger. In a calm reasonable voice you lay out the ground rules like how to get on, where not to put feet and the importance of sitting still and not squirming around like a 2 year old and that she understands she has no input while on the back seat. Like a ship, on the bike you are captain period since both your lives depend on you. Next thing is try and get her to understand she just needs to relax and let you do the driving and if she shifts an *** cheek you can change lanes unexpectedly . Some of them get it some don't and I suggest a few short low speed local rides for you both to get an idea if it's gonna work or not.
It wasn't hard to teach, just advise her that her movements at low speeds will adversely effect the control of the bike. I tell them that when I turn for them to look over my shoulder the direction we are turning...left turn, left shoulder...right turn, right shoulder...usually they handle it well and I have had very little issue with passengers.
The only thing I can add is to tell her to signal you when she's seated and comfortable. Give her a moment to get comfortable and feel secure. This can turn out to be a very rewarding relationship.

This. It will allow you to ride more normal and not worry about her balancing the bike the wrong way. Otherwise sit still.
