Found a 1969 Sportster in boxes. Said it was complete and has title. He is asking $900 obo. Id like a project to fiddle with, thinking id offer $500 and see what happens. Is it worth it or an I getting into a disaster?

That would depend on how much you can do yourself & how complete it is.
That depends on a lot!
It would have to be seen and inspected closely to really determine value.
Bearings in the swing arm, tree, engine,, and the tins,,(?)
$900-OBO??
69 is still HD not a bowling ball.
9 could be obscene or a steal,,

I sold a 70 sporty basket with no title or engine guts for $500 15 years ago so any parts pile with paper under $1000 is worth looking into, for that money if all the big parts are there and the numbers match you are already ahead of the game.
I've rung up 500 bar bills in a night with a buddy lol. What's the worst that can happen, you end up parting it out? Worth checking out if you're looking for a project.
If your not looking to cash in when you sell it, I would buy it and do something interesting with it. Like a '70's era chopper, retro board track racer , or make it look like an early '20's Harley. Putting it back to original has been done a million times ,plus there's not alot of demand or cash being offered for them. Just my 2 cents.,,,
