Fitting Chaps
Back when I wore chaps, I had them "trimmed" at the shop where I bought them.
Mine were as long as possible but NOT touching the ground when I walked.
FWIW, I also used "suspenders" to help keep them up.
Now that I wear leather pants (over my jeans) I still use those same suspenders, along with a belt in the leather pant loops.
Just so you know, chaps nor leather pants are made for walking around in.
Both are heavy and both can get hot when you're not moving.

Mark them to length while sitting on your bike, not while standing up. This will give you the proper fit when riding and help prevent them from riding up your legs. However you mark them, add an inch and a quarter to that length then cut them. Turn them and inside out and draw a line 1" up from the hem, using crazy glue, shoe goo, or contact cement run a bead along your line. Now fold back your hem and tack it in place. Use heavy books as weights to keep your new hem from moving or slipping. Voila, properly hemmed pant legs with no sewing involved.
I left mine slightly longer in the front than in the back. I ride a bagger with floor boards so with my feet on the boards, I cut the hem so it's parallel to the floor so it keeps the wind from going up the front but also keeps me from stepping on the back when I am taking short walks in them (gas station, etc). If I'm going to be off the bike for more than like 5 minutes, I just take them off.
Keep the portion you cut off from one leg
Using super glue stick the sides together until the opening is just large enough to place the threaded portion of your gas cap in. Place on side of velcro at the waist of your chaps and the other side of the velcro on the part of the chaps you cut off and stuck together. This will make a handy loop to hold your gas cap when filling up and you will never to wonder where to put the gas cap
