Low Mileage Record?
I too have a VERY low mileage '03 RK in my garage that I cannot figure out what I want to do with.
Whatever I choose to do I'm going to lose a lot of money, so the best option seems to be to do nothing.
The story:
My wife was on her second H-D, a black Heritage that she loved.
I had made it a "solo" ride with the matching leather tour pack, lots of chrome accessories, lowered it front and read and it was in excellent condition.
In early 2002, I got the idea (here's where the plan starts to deteriorate) that she needed a newer, better riding bike.
We went to the dealer and ordered her a FLHRI (hard bagger) in Ruby Rich Red, with the "Gold Key Pkg.". Many of the accessories (cruise control, chrome front end, rear and rear lowering kits, etc.) were installed by the dealer before I picked it up.
When I got it home, she looked at it and said "I don't like the WW tires".
My enclosed trailer was sitting in the driveway so I rode it directly into the trailer and returned it to the dealer that week and had NEW black wall tires installed.
We still had her Heritage and she continued to ride it as I continued to add more and more accessories including the 100th Anniversary Edition medallions, sundowner low profile seat, windshield bag, V&H mufflers, Power Commander module (never programmed) chrome front rotor and caliper covers, front & read chrome bumper rails, chrome saddle bag rails, lighted run/turn saddle bag lid lights, chrome saddle bag to fender fillers and much more that I can't even remember.
FINALLY, the day came for her to take it on the first ride.
I rode it through town and pulled into a paved parking lot(our street is gravel.
I got on her Heritage and she got on her new RK and we rode approximately 11 miles.
When we stopped I asked her what she thought and her exact words were, "I like my Heritage better, you can have it"!!!
Through the years, I've changed fluids, washed and waxed it a few times, put new (WW) tires on it in '14 and rode it to the bar ONCE, just to put a few miles on it.
I'm not sure of the exact mileage but I know it's under 300 MILES.
And that boys and girls is how and why there are some bikes out there with very few miles on them!

Rode it home 100+ miles as it sat. Gave it a once-over (didn't really do anything), then the next weekend my wife and I took it on a 350 mile trip.
Over the winter, I upgraded a bunch of stuff (new lights, new seat, new brakes, new tires, carb tune, new exhaust, new suspension, various odds and ends).
Other than a lifter block that worked itself loose recently, the motor is surprisingly tight. Very dry.
I'm up to about 17k miles on her now. Depending on my mood, I may crack into the oily bits over the coming winter, but only as an upgrade. I may very well run her another 100k miles as is.
I don't know much about the newer stuff, but these old Evos are both as simple and as tough as a hammer. There are lots of low-miles models out there getting turned over these days. IMHO, there has never been a better time to get an incredible amount of bike for easy money.
