Mine did similar. I'd be riding down the highway and my speedo would drop back to zero momentarily. Turned out my negative battery terminal was loose, well I think it was best described as not tight. Very surprised that it did what it did, but as soon as I tightened it, teh problem went away. I'd check that and make sure its good and tight and also where it bolts to the frame, which is by my left knee on an Iron.

That was my first thought, thats all tight and good shape.
that was going to be my suggestion too, tighten all the cables on the battery and on the block. Since those are tight already; could it be the stator or maybe just the regulator? there are videos on youtube to check them with a volt meter.
Bad temperature sensor. Thinks the engine is colder than it is and is choking it.
It's carbureted. The mixture is controlled by jets and the enrichener, not a computer.
OP, I agree with upflying. Check your battery cables, both ends. Your crankshaft position sensor (CKP) could be an issue, but the battery cables are easier to check.

ill double check but that battery terminals are tight and on the frame. How do I test the CSPS
