The freezer trick for me didn't make much if any difference in fitting the gaskets.
Here is what I did do that worked like a charm. I cut a 2 1/8" diameter out of some finished 3/4" pine that I had laying around. I put the gaskets into the holes so they would just stay there. Then I used my disc to push them in the rest of the way. Being able to apply constant pressure on the whole of the gasket made all the difference in the world. They just pop right it.

That is the trick. If you can make your own tool, like you did, that's the best solution.
