I had Mean City Cycles do my fatboy seat with their double layer memory foam package. It is much better than stock and they re-used the stock cover. I have not noticed it being any warmer and I stayed away from the gel for that reason.

I've had some people say get feels warmer and others that have not, but if you leave a seat in the sun it will get hot no matter what. I have a Drag Specialties seat that has Solar-reflective leather in the seating area, which they claim reduces surface temperature by as much as 25°F but it still feels pretty warm in the sun!

I also had MCC do my Mustang Vintage Solo seat with memory foam. It's not perfect, but it is much, better. I still get a little sore but not as bad and I don't dread getting back on after a fuel stop/smoke break.
The beads I mentioned earlier do a wonderful job, but take some getting used to. I used them before I had my seat modded.

MCC. Me and the princess scheduled a ridein appointment. Hour later done. Best $125 i could put on a seat.

The wife and I both find the OEM saddle on our 17 Limited to be very comfortable. She slides around a bit during stops and the saddle can get hot in the sun. We just added a fitted sheepskin from Alaska Leather and it is really nice. She is sliding a lot less. The saddle stays cool in the sun. We both find we are re-positioning during rides a lot less. Everyone's sit bones are different but we both feel the sheepskin has made an already good saddle even better.

I put a Brawler seat on my Sportster. Still wasn't comfortable so I took it to local furniture upholstery shop He installed top grade seat foam under original cover $70. Made a big difference.
Don't know about gel. Bicycle seats and riding pants have gel so it must be good.
