Somehow I think a pan would be way over the OP's head, I'm not getting a sense the mechanical skills are remotely there.
I agree , Evo would be a good older starter bike. Belt driven, still lots of parts available and a pretty darn reliable motor when setup right. Still has the good old Harley thump and very customizable. Also you can go longer distance with less worry. They are more affordable than a good shovel or pan.
My advise to the OP would be to do some more reading and understand what he's looking at and talking about. You can get over your head real quick $$$ wise if you have no idea what you're looking at.
