Default Old school still rule !

G"day From downunder ...I'm interested to gain some insight, into what has to be done , correctly using an 96/ or 103 A motor , possibly with an up graded capacity to 120 Ci , crank, trans . etc. ... being used in a HD Ultra , loving it the way it is, but..hate all the computer control system .. have not had a problem thus far ,but the day will come when all these will fail I feel , due to in built obsolescence , of all thing's these day'as including bike ecu's would like to strip preferably all/ or most if no option of the computer monitoring/ running system off the bike completely, and go back to basic's bare bones , rolling project , aim is strictly touring , ride to work. everyday if can ... so reliably and low torque and fuel economy is all important .. like to know what carby is suitable best , and what ignition module is my main query here the best or any other/ all ignition systems , like an old shovel FL , sure this would have been done , and have the facilities to do this , AND WILL , just looing for some sound advice on this great forum ... I remember pulling an old 45 WLC flat head out of uncle's shed , when I was a youngster ,14 not started in decades, and I got it , started ... eventually on a 9v torch battery !!! even mice blew out the exhaust ! what a day !!, yeah old school .... still rule's !! CHEER'S AN THANK'S IN ADVANCED .. PS THAT OLD WLC IS STILL RUNNING
