Your comments on this thread (which I am reading quite belatedly) really resonated. I have an '05 FLSTN, SERT, SE 16 ga exhaust (swapped out baffles for thundermonsters and had it dynoed, which I know you're not a big fan of, as one could make their own, but I'm still new at the do it your self gig). I think a 2 into 1 header with single fishtail would look perfect on my bike. I am also looking to eventually build out to 95 inches or 100+, and have wondered if going carb instead of EFI would be smart. A couple of questions, if you don't mind. First, since I have the SERT, if I go carb eventually, the SERT is married to my ECM only. With a carb, I don't need the ECM, no? So could I just sell my ECM with the SERT to someone that wants a SERT? Second, do you have a suggestion or two on where I could find 2 into 1 header and single fishtail? Since I have Thundermonsters, if I match the inside diameter of the fishtail, is it advisable to still get baffled? I appreciate any feedback you could offer.

On the pipes - I know of two options you can consider.
The first is to get a set of head pipes from an FLSTS. They should fit your bike, but check it out thoroughly. You'll be using the right side only. Get a freeze plug and block off the short piece that comes from the rear pipe and crosses over to the left side. I used an adjustable freeze plug, tightened the nut, then brazed it. Now comes something I'm not sure about on these pipes: The old Shovel-type dresser pipes had a piece welded inside the pipe coming from the rear head to the front pipe. There was a smallish hole drilled in it to allow it to act as a crossover. I don't know if the FLSTS pipes are fixed up the same way. If they are, the piece from the rear head to the front pipe will need cutting in two, and then the disc completely removed so you'll have full pipe diameter in that short pipe. Next the pipe is welded back together. A heat shield covers the weld. Mount your fishtail, then decide if you want to baffle it. The 2-into-1 setup is not that noisy, so I never baffled them. If you decide to use the ThunderMonsters you'll need to install the rear exhaust one while you have the rear head pipe cut apart forremoving the crossover disc. You'll probably have to cut the front headpipe apart to install the TM in the frontexhaust. I'm not sure whether you could simply install just one in the rear section of the pipe. Might try giving TM a holler and see what they say. I would simply not use them if it was my choice.
The second option is to take a gander at the Roadhouse Classic 2-into-1 system. J&P carries them (page 225 in my newest catalog) - p/n 440-870 (long for saddlebags), 440-875 (short). They come with an optional tip - Sharkfin & Cadillac look like a fancy fishtail. They are muffled and require no jetting or EFI changes from stock, but there are also several different optional baffles that should be a little louder. They also include heat shields - flex-pipe that make 'em look like the old pipes.

I've not heard of the Hackerpipes outfit. Their 2-into-1 Nostalgic pipes for the Softail looked like a header system more than an old style set.
