Since Wile E Coyote never caught the Road Runner in all those years and he obviously didn't starve to death, he had to be eating something. So he probably was going to McDonald's, or just eating cactus. But whatever he was eating, he was eating so catching the Road Runner wasn't about eating, it was about the challenge.
