I have a friend who has always said: "My idea of roughing it is staying at a Holiday Inn!" He is not a camper. Or a biker.

Mine is a discontinued model but I think the Evo-Lite model replaced it. It's 2" thick when inflated which is adequate. A little thicker may be better so I may upgrade this soon, but it does quite well.
I have a Therm-A-Rest also. It will mostly self inflate if you give it enough time! If you are setting up camp at sundown though, you probably will have to "help it" a little. I have found if you roll it out and open the valve, in 2 hours it will be mostly inflated. My beef about mine is it's lack of width. I know they designed it for hikers and they don't want it too wide for their backpacks. But just rolling to your side and you're off the pad.

Two man nylon tent, sleeping bag, thin roll up foam pad. I use my clothes for a pillow.
If it looks like rain, motel.
A good night's sleep is important for me. It makes the next big day on the road so much better.
I do all my eating at restaurants and gas stations.

Yep! I actually use a "4 man" tent. A Coleman I bought at Wally-World. It is tall enough so I can stand up and room for stuff out of the weather. Rolled up it's really not much bigger than a smaller tent, as someone mentioned earlier.

6 MONTH OLD POST! I bet he's got it figured out by now and the camping trip is a distant memory.

This is how I travel solo. I remove the king tour which we use two up and add the sissy bar. T-Bag goes on the bar sitting on the rack. That is clothes, accessories for camping. Tent, pillow, bed and bedding go into a waterproof river bag and sits on the seat behind me. It looks like this....https://ibb.co/hTr0AJ]

I have two REI tents. Chosen for short pole length, quality of weather protection, durability, and ease of set up and take down. The smaller is their two man wedge style. Great tent, small footprint, great fly, nought room for your bag and to get your pants on. The other tent is their three man, or two and one half man tent. Slightly larger footprint, but shaped so the shoulder area is wider. A better tent if you know you will be multiple days getting up in rainy weather. I can make coffee in it.

So, I'm in my 70's and only hunting in the wilderness do I sleep on an inflatable pad. Nothing makes me feel human like a good nights sleep, fresh and a coffee in the morning. So my sleeping system is going to seem weird to many of you hard core cruisers.

i use an inflatable twin mattress, fitted sheets, lightweight fleece blanket and a full size but thin pillow. I sleep well and wake up ready to ride all day.

The tent, rolled up mattress, fitted sheets, blanket and pillow all fit in the waterproof river bag with room for a pump, and ground cloth and 6x9 cheap blue tarp that always seems to find a good use in the rain.

I just want to be able to sit up a comfortable sleeping site that is easy to put up, take down, and doesnt take too much space on the bike. OK guys share your knowledge.
I use the same gear I used backpacking with my boys when they were scouts. One man tent from REI, lightweight sleeping bag, I have several different once for different temperature ranges, self inflating air mattress pad, and a small tripod camp stool. I also bring a multifuel single burner camp stove for making coffee even if I don't cook. A side benefit of the stove is that it runs off unleaded gasoline, it's 1 liter fuel bottle is an emergency fuel source. 1 liter might get you 10 miles, but that's 10 miles you don't have to push.

Reminds me of my brother last time we camped, just went to target and bought the cheapest tent they had, never checked the box, turns out it was a kiddie tent, man we laughed so hard, he literally would not fit, he was rolled into a little ball with his head hanging out the door.
