Call Ronnie at R.N.O. Transport and see if he can help you out. All he does is haul bikes and my shop has used him numerous times.
He's insured and very experienced. Tell him that Jason from Catalyst Cycles in Smyrna, TN gave you his number.

I am thinking go down there, see if I've got time to ride and find a place to keep it when not being ridden, then have it shipped. Has anyone done this before? Any shipping company you would recommend or any you would avoid?

The bike is a 2007 Ultra Classic Electra Glide with detachable tour pack, currently looking like a SG which is how I'd ship it. It's in Louisville, KY and would be shipped to the Tucson, AZ area.
I did Uhaul, rented smallest truck and trailer 19$ for trailer unlimited miles

I would do a U-Haul one way if I knew for certain I'd have a place to keep it.

Riding it down would be amazing except for the idea of riding through foul weather with more gear than I can actually fit on the bike, even with the tour pack on. I've tried as that was actually plan A.

I appreciate the feedback, I'll get some quotes. If it's too much or too much hassle 5 months isn't that long but I'd kick myself if I end up with free time in such a beautiful state and don't get to explore by bike.

Eventually I'd like to get a good enclosed trailer to use like a mobile garage but I'd rather take my time and do it right than go cheap. I met another service member who had an enclosed trailer with a generator, small workbench and basic tool setup, a TV, and few other things. Everywhere he went on orders within the states his bike went as well. I'd like to get on his level.

I had to ship my old Triumph a couple years ago when I was moving from Atlanta to New Mexico and didn’t want to ride it all the way myself. I looked into a bunch of options and went with an actual vehicle transport company instead of messing with U-Haul or renting a trailer, mostly because I had no easy place to store a trailer once I got there. My bike showed up in good shape and the whole thing was less hassle than I expected. There’s a bunch of motorcycle shipping services out there, but I’d suggest checking out the kinds of services https://www.a1autotransport.com/services/ available here if you want something secure and handled by folks who know bikes. That way you can compare pricing and see if you want enclosed or open shipping for your Harley.
