I think your really looking for a fur collar. You might just want to take it to a good shoe repair, seamstress, leather clothing repair shop. Even if they can't get or make you what you want, maybe they can suggest someone.
FWIW, I recently had a leather Fighter Pilot/Biker type jacket (what is the right word??) that I started my riding life with 40 something years ago repaired. A few new zipper or pulls or 2. many seams restitched and a good polishing. $350 at a shoe/leather repair shop....Maybe I shoulda just bought another new jacket. But....I really wanted to wear THIS jacket again!!!
