I recently started to ride and see alot of people wearing high-type boots(cowboy or engineer type) and I also see the Chukka style which is about only 6 or so laces. Any opinions on which is best to ride with, currently, I am wearing sneaker type shoes and need to purchase a boot of some sort.
I have both styles... It's mostly a matter of what you like... I only wear the chukkas with jeans... Depending on where your controls are, You'll need some kind of fastener if you wear them with khakis... or you'll be showing a lot of leg.. Mine blow up to my knees on my RKC and that's on the floorboards!
Any boot that covers your ankles will do nicely. That will stop your ankles from getting burned if they get too close to the mufflers. I had to wear boots for work and got used to riding with the steel toe models.
Find a pair that feel comfortable for all day wear and you won't want to change out of them. I have 3 pair.
Work boots all day 9 inch speed lacers are my preferred foot wear (but I wear them for work so...)
Chuck Taylor's for the weekend..
Steel Toe lace-ups on those runs where trouble might be found...
protect your feet and ankles, try on several styles, wear what is comfortable since you don't want to have an excuse NOT to wear them. Keep in mind you have to find a balance between riding and walking. Some of the most comfortable boots for riding just suck at walking.

I gotta say - the Chuck Taylor hi-tops are what I've been wearing since I was a kid in the early 70's. I'll wear 'em on my bike if I'm just cruising on short rides.
