I don't wan't to spend your money. But I would not use heat. If you can get it out with easy out or cutting a slot and use a screw driver. And the threads are still good I say good to go. But Its your life. I would not re thread or use a healy coil. Id buy a new one.
I want to give the pipe wrench idea a shot before I go heating things, or splitting the caliper apart, etc., but, I currently don't have a pipe wrench, but will get one today. For a 3/8 in diameter bolt - with just shy of 3/4 in of usable gripping surface, what size pipe wrench would be a good choice. Thanks for all the advice. I'll get her out somehow.
I went to JMPANCOAST today at Fredericksburg VA bike show to see if his old caliper would work. No joy on that, but many thanks to him for bringing the pieces along anyway. I head on home stop at Home Depot to shop for a pipe wrench. I'm sitting on the floor, caliper in one hand, pipe wrench in the other trying to figure out which size I need, and this guy sees me, and says, you got a stuck bolt, I say yep, he looks at it, says I got what you need in my truck. I pay for my stuff, follow him out to his work truck. He sprays some silicone stuff down into it, vices the caliper up, knocks an Irwin bolt extractor down onto the sawed off head, grabs a big breaker bar, and 1 minute later had her out. Good news, but gets better. He runs a 3/8 bolt down and out a few times, cleans out the debris, and just got home, and been cleaning it out more, and old bolt is working just fine in there. Just wanted to say thanks to you all for the tech and moral support. Production will now continue on putting bike back together.
The guy that helped me had the 12 piece combo SAE/metric. He was a caliper saver for sure - caliper already reinstalled and torqued down - no issues. Brake lines go on first thing in morning, bleed em, reinstall gas tank, lights have already been checked, and should be good to go on my mini-ape install; its taken me since Friday all day until now, but will be worth it.

Think about the heat that the brakes make when heavy braking, I have seen rotors smoking before,and it didn't seem to hurt the caliper...
i'm thinking the there must be a lot of heat generated by the friction of your avatar.
