You've picked a great ride (for mid winter). But, you will enjoy the route just the same. My preference is to stay in or near Marathon. It is a good sized place with lots of rooms and eats. Larry was just down there 2 weeks ago. Took his bike from Clearwater to Key West. Here is is "Log Book".
We used to live in Key West on a houseboat for a long time and Larry said that many things have changed as far as businesses being boarded up and closed due to the housing market and high rents.
I used to be a tour guide down there for the Conch Train and at the Hemingway Home and Museum. If you have any questions about the do's and don'ts, just PM me and I'll try my best to get you in the right direction.
And as Larry said earlier, the Harborside Motel and Marina is a good place to stay.
