The advantage of a 2 piece versus over a 1 piece rotor is heat dissipation.
2 piece rotors also are not as prone to warpage from heavy high heat usage. 2 piece rotors also look better and racier than 1 piece rotors. Thats the only difference. I have never heard of a 2 piece rotor that could be taken off without removing the wheel from the bike (As Snarley stated)? I own high end 2 piece rotors on my Deluxe and where they come apart (The brake pad contact area) it is still inside the hub area.

Two piece rotors are basically floating rotors. 2 pieces that are held together by hollow rivets. They dissipate heat better and don't warp as much or as easily. They make braking smoother. They go on and come off just like solid rotors, they cannot be separated.
