And this one under routes for some great rides in my area (North Central) of the state

The Pig Trail is awesome too with the best parts on the western side of he state.
They've got great downloadable ride maps giving you miles, number of curves, etc. for many great ride routes.
I'm in SW Missouri and ride Arkansas often. I find the roads to be in good condition, wide shoulders, well signed, and just plain fun. Some great mountain scenery. Catch "The Grand Canyon of the Ozarks" on Highway 7 near Jasper. Pig Trail is a must. Google "Peak to Peak ride Arkansas" for another good one.

Day One:
Would suggest leaving Russellville, heading west on I-40. Exit at Lamar exit, run Hwy 123 toHwy 7 go north on 7, turn off Hwy 7 and pick up 123 north again. Ride 123 toward Mt. Judea. This is called the "Arkansas Dragon". When 123 junctions with hwy 74, run 74 to Jasper. At Jasper eat at the Ozark Cafe AND GET FUEL.
Leaving Jasper, continue west on 74 to Ponca, AR. Turn south on Hwy 43 near Ponca. Watch for Elk along the river to your left (east) as you run 43. Run 43 to Hwy 21 and go south on 21. Run 21 to Hwy 16 and go east. Run Hwy 16 back to Hwy 7. Run Hwy 7 back to Russellville.
Be SURE to top off your tank at Russellville and Jasper. There is almost NOTHING between Jasper and back to Russellville.
Here's the Google Maps route for the above:

Day Two:
Leave Russellville, hit the Lamar exit again, this time follow 64 to Hwy 103. Run 103 to the Oark General Store at Oark, AR. Eat a great breakfast. Oark General Store is a preserved 1890 general store that has FANTASTIC food. Link to it:

From the General Store leave south on 103 just like you came in... HOWEVER....turn west on Hwy 215 about two miles west of the Oark General Store. Hwy 215 is going to twist and turn alongside the Mulberry River and along some bluffs.
Turn north at Hwy 23. You'll now be on the "Pig Trail". Run 23 Hwy to just south of Huntsville and turn EAST on 74 to Kingston, AR. Kingston is a small restored town. I recall there being fuel there and a cafe... but take no chances. Suggest a short trip into Huntsville for fuel if there is ANY DOUBT.
Leaving Kingston run 74 hwy to Hwy 21, turn south on 21. Run 21 back to Clarksville, then hit I-40 and return to Russellville.
Here's the Google Map route for Day Two:

Note: The above routes will contain some SERIOUS switchbacks and very ISOLATED and wild mountain country. Make sure you fuel up at each convenient opportunity.
Have fun and enjoy the great State of Arkansas!!!
