RE: Extended road trip. What do you guys carry along?
You should look into carrying a tire repair kit and a pump. If you're not running inner tubes fixing a flat is pretty simple. There are pumps which you can run off of a 12 volt adapter as well as some that you use the motor as a large air compressor by attaching a hose to the spark plug hole. A couple of flares in case you have a break down at night on a dark road would also be a good idea. Lastly a good map so you can avoid the slab.

a 2006 bike probably wont need spare parts or plugs. A few basic tools to fix anything that vibrates loose, flashlight, knife, and zip ties.
Something to clean your windshield, glasses, goggles, face-shield
All the basic OTC mets... Tylenol, immodium, tums, benadryl, visene, nodoze...
Emergency snacks. I have been in areas where I couldn't find a place to stay or eat and nearly fell off my bike from exhaustion. High energy stuff to get you that last 100 miles can be a life saver.
Phone, charger, multi-use clothes...
Toilet paper.
Should all fit in one saddlebag. I always pack an extra dufflebag in my saddlebags (one that collapses to use almost no space) for things I might acquire on the road.

Hadn't thought about the snack thing? Good idea. Thanks again everyone for all the advice.

Take less clothes than you think. (This is not counting your ridinggear of course.)You'll be buying t-shirts and there are washing machines in most motels.
