What model Harley do the big motorcycle gang members ride, like Hells Angels, Mongols etc.

Any and all. Just look for their runs people have posted with them riding by.
You'll see them on all types of HDs.

The steriotypical 1% bikes that I've seen are:

CA Hells Angels- Black Dynas and all sorts of other customs
Mongols- Stretched slammed baggers with apes
Banditios- Red baggers and customs
Galloping Goose- Choppers

Again, those are the steriotypical ones, all clubs ride all sorts of American and allied bikes
