I use a local saddle maker that uses glue (contact cement) to hold them in place and then stitches them.
If memory serves me right I believe this is the way they did mine. No taking this patch off now for sure.

Definitely sew them on. Make sure that you go to someone that has the machine with the arm on it that can sew inside of pockets. Nothing worse than taking a new vest in and picking it up with all of the pockets sewn shut. I am speaking from experience.

If you're near any military base just find the local mamasan who will sew into leather. I had to go off base to get it done, but it looks and holds up much better.
No bases near by but the bike nite events usually has vendors that sell patches and have a machine to sew them on.
