Cardo Packtalk Issue with Google Assistant - SOLVED
I have been searching all over the internet for a fix and am came up with a lot of responses that do not match the problem. I kept messing around with the phone and finally figured out something that worked for my specific application.
Depending on the phone you have this could be different, I have a Samsung Galaxy S10+.
Go to phone Settings > BioMetrics and Security > Permission Manager > Microphone
Lookup Chome, change settings to Deny.
Once I did this fix the Packtalk was able to initiate Google Assistant and the commands were recognized. Before I could yell until my eyes popped out and the phone didn't get any input but the breeze blowing as we went down the road. Now the prompts are even louder, I assume because the mic isn't picking up so much noise now.
However, I did notice that the setting changed back so that is another issue.

Thanks for the details and advice on how to resolve the challenge. I'm on a 2020 HD Ultra Limited (Boom GTS), a Samsung Note10+, but am having the same issues with a Sena 30k and 50s. I was finding the same situation where the first voice command ("OK Google") worked great but any follow-on voice commands were lost or so inaccurate the function was useless. The inaccuracy of the commands when my voice was actually heard makes sense as it was the phone mic and not the headset that was active. Since the situation seems like it's occurring on both Cardo & Sena it looks like the headset is not to blame this time. I'll need to test the setup with the modified settings during my next ride.

I have upgraded to the Samsung S22 and haven't had that problem at all. I am guessing it was the S10+ software or something. Eventually it started working great on the S10 as well.
I am now using 2 PackTalks, one for the GoPro and one for me and it works great. Only thing is, when recording on the GoPro using a PackTalk setup you do not get ambient noise. By that I mean, when you aren't talking it is dead silent. I have a video on my YouTube page that exhibits that very well, the Junior Urias BBQ video.
