The only thing I think I've ever looked at on the new bikes is the miles remaining on the dash. When I fill up it usually shows around the 240 mark. I think we have 6 gallon tanks.. so that's about 40 miles to the gallon.
I'd say your in the ball park especially if your driving around town mostly.
Need new hips so I don't get a lot of highway riding in as yet. Going to try a 1K 4 dayer In a few weeks so we'll see how she acts, be a mixed bag of highway, twisties and major elevation changes.
So far on my 17 RGU the low was 38 mpg when bucking a 40+ mph head/cross wind and a high of 54 mpg. Mostly in the mid 40's and I don't do city driving.
A little, up to 35ish depending on my happy hand , it's so easy to hot rod that bike LOL!
I went from a hopped up Dyna to the M8 RK and can play around with it like my Dyna with the added benefit of a much smoother ride, love it! Really digging the low end torque with this M8 motor and it don't even have a stage 1 on it!
You have your hot rod shovel which I am really jealous of, what a sweet heart. She has real class!!!
My mileage has improved as I put miles on the bike. I started with 30 mpg, but as I got to about 3000 miles, it started going up. I generally get 37 mpg and rarely am in the city. Ethanol-free gas gets me about 5 mpg better, and there's not much of that here in my next of the woods. The best I ever got was 45 mpg on my way to sturgis.

When I first bought the bike, my mileage was low 30's (mostly around town). I now have 5,000 miles on the bike and the mileage has improved. Just rode all highway today and got just 43 MPG, this is about the highest I ever got. Just around town riding and the mileage is in the high 30's.
I was hoping for a little better. My '04 FL gets about the same on the highway, a couple MPG better around town.
I just put 800 miles on my 17 Ultra Classic getting 42 MPG keeping it under 70 mph not to bad. Riding easy still breaking it in staying below 3500 RPMs i know if and when I start riding harder I'll drink up a lot more gas.
