I just got a 21 UL, 114, and its night and day over my 14, 103 stage 2 power wise, more in the upper gears, lots of pull, seems to handle much better too, I'd like to get talked (ridden) out of my warranty, lol
i had a 2013 cvo 110, tuned with pv stage 1. i had installed rocker lockers on it, so the top end didn't rattle too much afterwards. got a new 2019 114 when my cvo got totaled. with just slip ons, the 114 was hands down a much better ride than the 110. valve train was quieter, not as hot, and definitely pulled harder than the 110. i'm quite well pleased with mine and don't miss the 110.
OP, something to consider about the 110 engine...we've seen many reports on the forum of lifter failure on those engines. One of our moderators, "uklauren", owned a '16 Fat Boy S with a 110 and had a lifter failure which trashed the whole engine. And there weren't a lot of miles on it either.
If I did buy a bike with a 110, first thing I'd do is swap out the lifters for some good aftermarket replacements.
I had a 2016 110 Low Rider S that was nothing more then a stage 1. Was fun as hell on the light(er) Dyna chassis. But got hot as F - easily to and over 300deg during summers. A few bikes later I now have a 2017 Low Rider S with a Fuel Moto 113 kit, which rips. The most fun I’ve had on 2 wheels. I also have a 2020 Road Glide Special with a Fuel Moto 128 kit, which is faster. When I’m riding it I think “wow, this is a lot faster then the Dyna” - but when I’m on my Dyna, I think “Hmm, maybe not as much faster as I thought” - the 128 is definitely more “elegant” - smoother, quieter valve train, more linear power. Better in every way.
However the Dyna is more “raw” “ nasty” and “mean” is the only way to put it. And it sounds better. And that amounts to more fun. I’m lucky enough to have both, because it would be a tough decision if I had to pick only one.
The funny thing is with the Fuel Moto 113 kit the motor on the Dyna runs so much cooler then it did with the stock jugs and cam. I guess all that fuel is keeping it cooler. Who knows. The 128 however is pretty hot. Easily hotter then the stock 114. Again, who knows why...

Have a friend with an 07 CVO Dyna it has stage 1 and dyno tune . It will easily run off and leave a 20 LRS watched this happen several times . The 110 does run hot but its not that far behind the 114 ...

I have a stock 107 in a Roadglide, gives me all the power I need and runs quiet and cool, I think about bumping it up, but not because of performance but mostly cause Im bored.
