I didn't think you could sump the bike in the parking lot. Actually had to ride it and pretty hard too. As a rule, if there is a problem I check what I did first. If it is sumping in the parking lot maybe oil pump? I know you checked the oil ring... Were the piston oilers bolted down?
When installing the oil pump, you are supposed to install it with the mounting bolts loose on the cam plate (4), manually rotate the motor several times to ensure proper alignment and then torque. Could be that oil pump gears were not meshing to their liking and broke. I would be pulling
the cam chest apart for inspection before moving further. And as JammerX stated above, loose piston jets were an issue in the early M8's. You have to pull the top end to check those unfortunately.
Something don’t add up. Did you guys check, by any chance…the crank sensor for oil prior to tear down/build?
You do mean 3 quarts, not 3 ounces, right?
