depends on outside temp's the type of driveing you do . but on avg it should be 220 or more.myself i did not like it getting above 220 and got a oil cooler and wish i had done it sooner. well worth the money.
I recently added the harley cooler and saw around a 15 degree drop ... but it was done at the 1000 mile service and they put in syn3 oil ... planning on changing it to something better soon. Here is a link:
Thanks for the replies. I changed to Redline this summer and recently added a temp guage at the tank. Been running about 210 but outside temp is only in the 70's. Going anywhere outside of my little town is hwy driving at 60+ (posted speed).

at 210 your motor is in "happy mode".

On a stock 07 it is not uncommon to see 260, 270 or even higher. They do run hot.
Anything from 180 to 230 is fine and 200-210 is just right. HD says the higher temps are just fine also, but heat is absolutely the enemy of an air cooled engine.
