My advice is to pay attention to Vernal’s post about the route just east of SLC. 35 is awesome and 150 over the Uintas is a must see and will be your first taste of higher altitudes. My daughter lives in Kamas and I love visiting on the bike just to ride these roads
+1 on that one good buddy. Highway 150 from Kamas to Evanston (Mirror Lake Highway) is one of my favorites, and a stunner of a ride. I camp/backpack up there a few times a summer.
OP a West Yellowstone recommendation for you: Bullwinkle's Saloon on Canyon Street. Ask to sit at the bar. The evening bartender (Mary? Sheri?) is great, the drinks are great, the food is great.
Also Running Bear Pancake House for breakfast.
Also, the ride from West Yellowstone to Bozeman is a pretty nice ride.
